Winter warmer – enjoy Pumpkin soup on your patio
What could be more inviting than sitting around a long table with friends and family under your Cedar lined patio with with fresh crusty bread and a big bowel of winter warmer pumpkin soup?

Great for the whole family to enjoy on a winter’s afternoon under your patio
Ingredients
1 x large butternut pumpkin
1 x large sweet potato
1 & 1/2 cups of green split peas (soaked for about 1 hour)
1 x large brown onion
1/2 a zucchini
4-6 garlic cloves
1/4 cup salt reduced soy sauce
3 litres of filtered water
1-2 tablespoons of unrefined coconut oil
Method
- Add the water to a large pot and bring to the boil on the stovetop
- Peel and dice the pumpkin and sweet potato and add to the water
- Add the soaked green split peas to the pot
- Cover, allowing to soften
- Peel the garlic and onion and dice
- Dice the zucchini
- While the ingredients are in the pot boiling, melt the coconut oil in a saucepan
- Add the onion to the saucepan and allow to brown
- Add the garlic and stir in with the onion
- Add the zucchini and stir with the garlic and onion, allow to brown slightly
- Return to the pot and add the soy sauce, stiring in
- When the pumpkin, sweet potato and green split peas are soft, turn off the heat
- Add the onion and garlic mix to the soup pot and stir in
- Using a hand blender, blend the mix together, adding salt and pepper to taste
- Sprinkle chopped parsley on top
